The blade is crafted from AEB-L stainless steel and heat treated to 61 Rc, delivering an ideal balance of edge retention, toughness, and corrosion resistance. This hardness allows the blade to take a keen, stable edge while remaining resilient enough for daily use in demanding environments.
A precision hollow-ground bevel reduces cutting resistance and promotes smooth, controlled slicing through proteins, vegetables, and dense prep work. The geometry and flush handles supports excellent food release while maintaining strength behind the edge, giving the user confidence and control across a wide range of techniques.
